CHEF OF RESEARCH AND DEVELOPMENT
Kyumin is a Korean-American chef born in Canada, and raised in California. During his childhood he spent most of his time near the sea and on a small ranch in southern California. This is where his love for hunting and fishing began. When not in kitchens around the world you’ll find him on the river. Kyumin began his culinary career working for some of Canada´s best chefs including Michael Stadtlander, Mo Aoki, and Jeremy Charles.
His culinary backround is deeply rooted in farm to table style cooking, foraging , and fermentation . This has led him to travel around the world working in similar styled restaurants including 2 Michelin star Faviken Magasinet in Jamtland Sweden, and 1 Michelin star Kadeau in Copenhagen where he now resides as Chef of Research and Development.
