CHEF/OWNER, DEER & ALMOND
Mandel Hitzer has been a student of cookery for 20 years. He opened deer + almond in 2012, which gave him a stage to bring new concepts to Winnipeg food lovers. Mandel has become a leader and innovator in the food community. He co-created RAW:almond, a 21 day pop up restaurant, that brings chefs from all over North America to cook on a frozen river. Last year Conde Nast Traveller mentioned RAW:almond as part of the world’s top pop-up restaurants alongside Noma and El Bulli. Earlier this year, he took the pop-up to Churchill Manitoba, to cook a menu in a 250-year-old fort, under the northern lights with food inspired by ingredients from the land. He has manifested his dreams at Deer + Almond; a life full of friends, laughter and imagination.
