British-born and raised, award winning travel writer Nikki Bayley fell in love with Canada on a trip to Newfoundland in 2009 after eating a fresh-from-the-ocean sea urchin popped from its spiny shell as she paddled a kayak for the very first time.

Now based in Vancouver since 2012, Nikki explores Canada from coast to coast to coast writing about its communities and cultures through the lens of food and drink for publications around the world including National Geographic Traveller, The Australian, the Guardian,, and the Globe and Mail.

Nikki’s stories include harvesting icebergs to make vodka in Newfoundland, celebrating Canadian-Ukrainian culinary culture at Saskatoon’s King of Kovbasa contest, and exploring a taste of the wild on a foraging trip through B.C.
