Simon Thibault is a journalist, food writer, and producer based out of Halifax, Nova Scotia. He is the author of "Pantry and Palate: Remembering and Rediscovering Acadian Food.”

His work focuses on food - culture, history, practices, and other ways in which it is transmitted from person to person. As well as writing, Simon has worked in radio production (CBC Radio, The Southern Foodways Alliance), and has appeared on various local and national television programs talking about food.
