ABOUT THE CHEFS
Doug McMaster is a chef and founder of Silo, the UK’s first zero-waste restaurant in Brighton, as well as Executive Chef of the recently opened CUB in Hoxton, London. In 2009, Douglas won the ‘BBC Young Chef of the Year Award’. In early 2018, Doug gave a TEDTalk on ‘Waste is a failure of the imagination’, which can be found here, and June of the same year, Silo won the Innovation Award at the Craft Guild of Chefs Awards.
Tosh Agassiz originally from Vancouver started working with chef Jeff Kang for 5 years before deciding to open Canis. Now as CDC he oversees the development of new dishes and day to day operations of the restaurant.
Jason Mckenzie came to Toronto, Ontario from the east coast of Canada in 2015 to start working at Canoe Restaurant. Shortly after Canis opened he moved into his role developing the fermentation program; focusing on the potential of Canadian ingredients in new and interesting ways.
