This year was all about building up and recognizing excellence. How do we build greatness; through staff, relationships, and institutions, that stand the test of time. Then we asked how valuable is that recognition whether it be in the form of international awards or as a marked “culinary destination”? We looked at that question through the lens of flavour, service, and connection between guest and host, the value of awards, and the importance of creating a definable place.
