A rolling celebration of connection—linking Alberta’s wild landscape with the rich culinary and distilling traditions of Asia and Ireland.

Aboard Edmonton's iconic streetcar, Alberta chefs Winnie Chen (Fu's Repair Shop, Edmonton), Tracy Little (Sauvage, Canmore), & Liana Robberecht (Calgary) join Irish Drinks Practitioner and fermentation specialist Linda O'Flynn (Cask, Ireland) and Cocktail Director Glaziem Garcia (Fu's Repair Shop, Edmonton) to explore the parallels between these regions: a deep respect for land, seasonality, and preservation. Through foraged ingredients, locally sourced plates, and globally inspired cocktails, each stop reveals how spruce tips, herbs, and botanicals can echo flavours found across oceans—blending cultures through craft, storytelling, and terroir. Join us for a rare synesthetic, tasting menu experience carefully curated by Chef Blair Lebsack, Chef Jared Dunn & visiting Chef Jess Murphy--multi-award winning chef and co-owner of the iconic Kai Restaurant in Galway, Ireland.

With a clear emphasis on community and sustainability, Jess has made it her mission to provide sustenance through food as well as friendship. Jess was recently awarded Ireland’s only Michelin Green Star. Kai continues to be celebrated for their environmentally focused menu working closely with over 100 local producers and farmers ensuring your plate is full of honest local ingredients.

Special Guest, BLVCK SVM is a Chicago-based rapper and lyricist originally from South Florida, known for blending luxury rap with culinary themes. In his Bvck of House Series he collaborated with 14 high end restaurants across the United States and Canada to film live performances in their kitchens, including RGE RD which can be seen in the mikealstott music video. He has completed residencies in Europe and toured Michelin restaurants internationally with his signature events that blend haut cuisine and contemporary rap listening parties. Each course will be paired with a track from his album, Michelinman.

Setting the Table is an invitation to step inside our living classroom and celebrate the next generation of industry leaders in action. In collaboration with celebrated Pastry Chef and Author Bettina Schormann, culinary students from the SAIT School of Hospitality and Tourism will prepare a four-course showcase of fresh, local, and seasonal dishes served with a side of student success. Join us as we bring academic excellence to life, one delicious course at a time.

With each dish, they share the rich history and traditions of Indigenous cuisine from around the world, offering a deeper connection to the food on your plate. Local Alberta farmers and market vendors will share a few stories about their experience as farmers in Alberta.

Step into a warm, welcoming space that feels both like an intimate gathering and a culinary showcase, featuring thoughtful, seasonal cooking, combined with Indigenous culture. Once Upon a Brunch, inspired by Cinderella, is Terroir Symposium’s signature 20th anniversary brunch experience where culinary artistry and imagination come together. Lead by celebrated Calgary Chef Liana Robberecht and Michelin-starred Irish Chef JP McMahon (Aniar, Galway), this event is a collaboration featuring restaurants and businesses along Calgary's famed 17th Avenue.

In partnership with Calgary Opera and 17th Ave, guests are welcomed into a dream‑forward reception with handcrafted cocktails inspired by the words “a dream is a wish your heart makes,” before the experience unfolds into a seated tasting of expressive, flavour‑forward savoury plates guided by the spirit of “they can’t order me to stop dreaming.” Each bite is designed to be visually captivating, emotionally resonant, and rooted in creativity, collaboration, and the joy of beautiful food. The final chapter arrives as a grazing dessert tableau, closing with the sentiment that “where there is kindness, there is goodness. And where there is goodness there is magic.” 

This is not a traditional brunch. It is a modern, magical celebration of 20 years of Terroir’s culinary storytelling, created for those who cherish imagination, connection, and unforgettable experiences.

Two of North America’s most passionate advocates for sustainable seafood bring the finest West Coast oysters and salmon to one of Calgary’s most luxurious dining destinations, Teatro Ristorante. Teatro’s Culinary Director Matthew Batey and Executive Chef Camilo Kobek welcome Vancouver’s Ned Bell and San Diego’s Jason McLeod to the restored 1911 bank building, famous for its refined Mediterranean cuisine and rich wine cellar. Along with the oysters, seaweed, and sustainable Blue Salmon, this seafood-forward dinner will feature wild and farmed seafood (provided by Monterey Bay Aquarium) paired with exceptional wine and cocktails, and plenty of food for thought.
