Linda O’Flynn is an Irish drinks practitioner and fermentation specialist whose work explores the relationship between flavour, landscape, and traditional food knowledge. Working with wild botanicals, seasonal produce, and microbial transformation, she develops drinks that reflect the ecology and cultural history of the places they come from.

As Beverage Director of the award-winning Cask in Cork, Ireland, she develops drinks programmes rooted in Irish ingredients, wild plants, and fermentation techniques.

She is the creator of Tasty Anarchy, a drinks project inspired by people reshaping how we interact with the land, from seed savers and farmers to foragers, craftspeople, and Irish language custodians. The project explores how flavour can act as a living expression of people and place.

Her work sits at the intersection of hospitality, ecology, and fermentation, examining how plants, microbes, and transformation can be used to tell the story of a landscape. This approach reflects her broader interest in how Irish food and drink culture can reconnect contemporary hospitality with older land-based knowledge.
